Grilled Cauliflower

Cauliflower season is here. Not one of my favorite vegetables growing up, I do enjoy eating it now. I usually roast it. Since we were firing up the grill, I decided to try grilling it in a packet instead.

Packet Grilled Cauliflower

This was a great accompaniment to our grilled chicken.

Ingredients
  • 1 head cauliflower florets
  • 3 cloves garlic, minced
  • 1 tablespoon fresh basil leaves
  • ¼ cup olive oil
Instructions
  1. Preheat grill.
  2. Tear a 5 foot piece of wide heavy duty aluminum foil, fold in half.
  3. Place cauliflower and garlic on foil. Sprinkle with basil. Pour oil over all.
  4. Grill over medium heat for 15-20 minutes, turning once.

 

Roasted Cauliflower with Pecans and Cranberries

Roasted Cauliflower with Cranberries and PecansI need to stop ordering veggies without a clear recipe plan. This week, it was cauliflower. I spent a long time trying to decide what to do with it. I finally found this recipe from Martha Stewart for Cauliflower with Golden Raisins. I liked the concept, but wanted to use dried cranberries and pecans instead. This turned out really good-my husband and I ate the whole thing!

Roasted Cauliflower with Pecans and Cranberries

Ingredients
  • ¼ cup dried cranberries
  • ⅓ cup red wine vinegar
  • 1 head cauliflower, core removed and cut into florets
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • ¼ cup coarsely chopped pecans
Instructions
  1. Preheat oven to 425 degrees.Pour vinegar over cranberries, allow cranberries to soften.
  2. Combine cauliflower, oil, salt and pepper. Pour onto rimmed baking sheet. Bake for 10 minutes.
  3. Stir cauliflower, top with pecans. Bake 10 more minutes. Pour into serving bowl.
  4. Drain cranberries. Pour over cauliflower. Toss to combine.

I may order cauliflower and serve this for Thanksgiving!

Grilled Cauliflower

Grilled CauliflowerI’m never quite sure what I’m thinking when I order cauliflower. It has never been one of my favorite vegetables, so I’m always challenged to find something tasty to make with it. I found this recipe from Food.com for grilled cauliflower. Since I will grill just about anything, I decided to go for it! It turned out surprisingly good! It also reheated well the next day.

Ingredients
  • 1 head cauliflower
  • 1-2 tablespoons soft butter (amount will depend on the size of your cauliflower)
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried marjoram
Instructions
  1. Preheat grill.
  2. Smear butter over cauliflower in a thin layer. Sprinkle with thyme, rosemary, and marjoram. Wrap in aluminum foil.
  3. Place cauliflower on grill over medium heat. Grill for about 45 minutes, until softened.

Spicy Roasted Cauliflower

spicy roasted cauliflowerCauliflower was definitely not one of my favorite vegetables growing up. I don’t remember having it any way other than boiled. As an adult, I don’t think I ever bought a head of cauliflower until we started getting our harvest boxes. (OK, I might have bought some once or twice for a veggie tray.) When “forced” to make something from cauliflower, I discovered baking/roasting as a great way to get a lot of flavor. The recipe I’m sharing today has a Mexican flavor, with chili powder and cilantro.

Ingredients
  • ¼ cup olive oil
  • 1 teaspoon chili powder
  • 1 head cauliflower, cut into bite sized pieces
  • 1 handful cilantro, chopped
Instructions
  1. Mix oil and chili powder in a large bowl. Add cauliflower and toss to combine.
  2. Pour cauliflower onto a shallow baking pan. Bake at 425 degrees for 20 minutes, until cauliflower is softened.
  3. Toss roasted cauliflower with cilantro just before serving.
