Cauliflower season is here. Not one of my favorite vegetables growing up, I do enjoy eating it now. I usually roast it. Since we were firing up the grill, I decided to try grilling it in a packet instead.
This was a great accompaniment to our grilled chicken.
I need to stop ordering veggies without a clear recipe plan. This week, it was cauliflower. I spent a long time trying to decide what to do with it. I finally found this recipe from Martha Stewart for Cauliflower with Golden Raisins. I liked the concept, but wanted to use dried cranberries and pecans instead. This turned out really good-my husband and I ate the whole thing!

Cauliflower was definitely not one of my favorite vegetables growing up. I don’t remember having it any way other than boiled. As an adult, I don’t think I ever bought a head of cauliflower until we started getting our harvest boxes. (OK, I might have bought some once or twice for a veggie tray.) When “forced” to make something from cauliflower, I discovered baking/roasting as a great way to get a lot of flavor. The recipe I’m sharing today has a Mexican flavor, with chili powder and cilantro.
