Spicy Bok Choy Soup

Serves: 2-4
- 2 tablespoons olive oil
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 small head bok choy, chopped
- 1 pound sweet potatoes, peeled and diced
- 1 quart chicken broth
- 1-2 tablespoons chili-garlic sauce
- Heat oil in Dutch oven. Add onion and garlic, saute until onions are translucent.
- Add bok choy, sweet potatoes, chicken broth, and chili-garlic sauce. Bring to a boil. Simmer for 20 minutes, until sweet potatoes are soft.
