Apple Pear Buttercup SquashIsn’t it funny-I find myself selecting vegetables now that I used to avoid as a child. This week, it was winter squash. I saw this Betty Crocker recipe and decided to get some squash and try it. It turned out well, not at all the mushy stuff I remember from childhood.

  • 1 buttercup squash
  • ½ gala apple, chopped
  • ½ pear, chopped
  • ¼ cup dried cranberries
  • 1 tablespoon butter, softened
  • ½ teaspoon lemon juice
  • cinnamon and nutmeg
  1. Preheat oven to 400 degrees. Cut the squash in half, scoop out the seeds and strings.
  2. Combine apple, pear, cranberries, butter, and lemon juice. Divide between the squash halves. Sprinkle with cinnamon and nutmeg.
  3. Cover with foil. Bake for 30-45 minutes, until squash is tender.
