Isn’t it funny-I find myself selecting vegetables now that I used to avoid as a child. This week, it was winter squash. I saw this Betty Crocker recipe and decided to get some squash and try it. It turned out well, not at all the mushy stuff I remember from childhood.
- 1 buttercup squash
- ½ gala apple, chopped
- ½ pear, chopped
- ¼ cup dried cranberries
- 1 tablespoon butter, softened
- ½ teaspoon lemon juice
- cinnamon and nutmeg
- Preheat oven to 400 degrees. Cut the squash in half, scoop out the seeds and strings.
- Combine apple, pear, cranberries, butter, and lemon juice. Divide between the squash halves. Sprinkle with cinnamon and nutmeg.
- Cover with foil. Bake for 30-45 minutes, until squash is tender.
