I love grilling! When we went to Caballo Lake, I cooked corn in foil over the coals. Today, I used the same method on our gas grill in the back yard. I wanted it to be a bit spicy, so I used a chili infused olive oil we got from my mother-in-law. (When we made it at camp, we just used butter.)
- 4 ears corn
- 4 tablespoons chili infused olive oil
- Preheat grill or coals.
- Husk corn.
- Wash corn thoroughly. While still wet, place each ear on a square of aluminum foil.
- Drizzle oil over corn. Rotate the corn to coat in the oil.
- Drugstore wrap the corn. Grill for 45 minutes, turning frequently.
