Apple Pear Buttercup Squash

Apple Pear Buttercup SquashIsn’t it funny-I find myself selecting vegetables now that I used to avoid as a child. This week, it was winter squash. I saw this Betty Crocker recipe and decided to get some squash and try it. It turned out well, not at all the mushy stuff I remember from childhood.

Ingredients
  • 1 buttercup squash
  • ½ gala apple, chopped
  • ½ pear, chopped
  • ¼ cup dried cranberries
  • 1 tablespoon butter, softened
  • ½ teaspoon lemon juice
  • cinnamon and nutmeg
Instructions
  1. Preheat oven to 400 degrees. Cut the squash in half, scoop out the seeds and strings.
  2. Combine apple, pear, cranberries, butter, and lemon juice. Divide between the squash halves. Sprinkle with cinnamon and nutmeg.
  3. Cover with foil. Bake for 30-45 minutes, until squash is tender.

It IS Edible!

baked sweet dumpling squashSo, I decided to take a chance and try baking the Sweet Dumpling squash for company. (Crazy, wasn’t I?) Actually, it tasted pretty good. Not only is it edible, but the SKIN can be eaten, too!

Cooking it was a very simple process. First, I cut the squash in half and scooped out the seeds. Then, I put it in a pan with about a half an inch of water. Then, I baked it at 350 degrees for about 50 minutes. You can serve with butter.

It was quite sweet and had good texture. Next time, I think I will cover it in foil as it was just a shade dry.

Now that was simple, wasn’t it?
