Couscous Pilaf

Ingredients
  • 1½ cup chicken broth
  • 1½ cup couscous
  • 1 green bell pepper, chopped
  • ½ cup shredded carrots
  • 3 green onions, green part only, chopped
Instructions
  1. Bring chicken broth to a boil in a medium sauce pan. Add couscous, remove from heat. Cover and allow to sit for 5 minutes. Fluff with a fork.
  2. Add bell pepper, carrots, and onions, toss to combine.
