Grilled Yellow Tomato Salsa

grilled yellow tomato salsaOne of the items in our box this week was a bag of yellow tomatoes. I have eaten them in a salad before, but have never actually cooked with them. I was looking for a dip to serve with chips, and decided to make a salsa out of the tomatoes. Yellow tomatoes are sweeter than red ones. I gave them a little heat by grilling them first.

Ingredients
  • 1½ pounds yellow tomatoes
  • 2 tablespoons cooking oil
  • ½ large yellow onion
  • 1 jalapeno pepper
  • 1 tablespoon lime juice
  • 3 cloves garlic, minced
  • ½ cup cilantro, chopped
Instructions
  1. Cut tomatoes in half and remove stems and core. Brush cut side with oil.
  2. Peel onion and slice into ½ inch thick slices. Brush both sides with oil.
  3. Cut pepper in half lengthwise and remove seeds and stem. Brush skin side with oil.
  4. Preheat grill to medium high. Place tomatoes, cut side down, on the grill. Also place onion slices and pepper on grill. Grill all until softened, turning onion and pepper as it cooks. You will know the tomatoes are done when the skin is easily removed.
  5. Let vegetables cool.
  6. Remove skin from tomatoes. Chop tomatoes, onion, and pepper. Combine in a bowl with lime juice, garlic and chopped cilantro. Refrigerate for 1 hour.
  7. For a "more saucy" salsa, use a food processor, blender, or immersion blender to puree salsa to desired consistency. (I poured of a little of the juice before I did this.)

I think I’m going to use some of the leftover salsa as salad dressing this week. Besides chips, what do you eat with salsa?
