Grilling in the Rain

tangerine chickenWe have had such nice weather the last couple of weeks! I decided to use a couple of the tangerines in our box this week to marinate some chicken breasts. I got them all ready to grill over the weekend, so I could just pop them on the grill during the week.

Then, the rain started. It was raining lightly when I got home, and it got harder as dinner time approached. Fortunately, our porch is covered. Even better, my husband agreed to watch the chicken so I could finish up the last of my paperwork. So, part of the credit for this recipe goes to him!

  • ¼ cup olive oil
  • juice of 2 tangerines
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • 4 boneless, skinless chicken breasts
  1. Combine oil, juice, cinnamon, nutmeg and cloves in a resealable bag. Add chicken. Marinate at least 8 hours.
  2. Preheat grill to medium. Grill chicken until cooked through, turning half way through.

Guess I should be glad for the rain-we are low on moisture. How’s the weather where you are?
