This was truly a summer box: eggplant, squash, melon, nectarines, peppers, and, of course, green chile. I am actually freezing some of the chile I am getting now to use over the winter. I package it in 1/2 cup portions and put it in a freezer bag.
I did do a lot of cooking with this box. There were enough peppers and squash to get 2 meals out of them: Black Bean Quesadillas and Roasted Red Pepper and Summer Squash. I also created these other recipes from this box:
- Italian Turkey and Eggplant Pie
- Creamy Cayenne Celery Soup
- Swiss Chard Quiche (Italian Version)
- Spicy Roasted Sweet Potatoes
The lettuce in the box was used for salads, and the melons and fruit got cut up and eaten fresh.
