As fall approaches, I’m enjoying using the oven again. Even with central air conditioning, it is just too hot in the summer to turn on the oven very often. Now that the weather is relatively cooler (mid 80s here in Albuquerque), I’m back to roasting vegetables. I originally was going to cook the sweet potatoes from the box on the grill, but decided to try to go for a spicy fry flavor in the oven instead.
- 2 pounds sweet potatoes
- ¼ cup olive oil
- season salt to taste (I used about ¾ teaspoon, and will add more next time)
- Preheat oven to 450 degrees.
- Cut sweet potatoes into bite sized pieces.
- Combine oil and season salt. Pour over sweet potatoes and combine.
- Bake for 30-35 minutes.
Did you know that sweet potatoes and yams are not the same thing? Yams have a brown or black skin, and usually an off white flesh.
